Dark Chocolate, Sweet Potato Brownies with a Peanut Butter Swirl

Happy hump day! I cannot believe how fast the week goes. It always seems to zoom by. And there is so much snow here that tomorrow might be a snow day. I am sure my students are crossing their fingers and toes. I mean how dare I make them do work. Nah they actually don't put up too much of a fuss. Not yet anyway. We are still in the honeymoon, getting to know each other period. After all it has only been a week! 

Today 10 of my 17 afternoon grade 9 students were away....BAH. Not ideal. I do teach at a special education type of school, so it is common for students to not be in class. But that many of them. Yikes. It is not ideal to teach a class with more than half your students missing...Specially when they other half stare at you in silence no matter what you say. Sigh. Quiet classes are nice, but its actually even nicer when your students talk; otherwise you get tired of hearing your own voice. 

Maybe I could entice them to class and to talk with brownies, but not these brownies because they have peanuts in them and that is not school appropriate.


Recipe

Ingredients

  • 3/4 steamed and pureed sweet potatoes (I only mashed them in this batch, and I would recommend pureeing them) 
  • 1/2 cup coconut oil
  • 1/2 tsp vanilla
  • 3 eggs
  • 1/4 - 1/2 cup coconut milk (1/4 cup if you are adding the maple syrup and 1/2 if you are not)
  • 1/2 tsp cinnamon
  • sprinkle of salt
  • 1/2 cup cacao powder
  • 3/4 cup maple sugar and 1/4 cup maple syrup (if you want sweeter brownies)
  • 3/4 cup cassava flour
  • 1/4 tsp baking soda and baking powder
  • 1/4 cup chocolate chips of chunks
  • 2 tblsp melted nut butter
  1. Preheat the oven to 375 degrees
  2. Line a baking dish with parchment 
  3. Steam and puree the sweet potatoes with the coconut milk
  4. Mix together all the liquid ingredients, including the sweet potato puree (except the nut butter)
  5. In a separate bowl mix together all the dry ingredients, using a fork
  6. Slowly mix the dry ingredients into the wet ingredients 
  7. Add in the chocolate chunks
  8. Pour the batter into the prepared baking dish
  9. Pour the melted nut butter over the batter and swirl it around using a knife
  10. Bake for 20-30 mins, until the middle is set 

If you want to get really fancy you can make this icing, I made it but added a tblsp of peanut butter into the icing to make it PB icing,
