Hello! Carrot Cake Loaf with Pecan Crumble

While you are reading this I am still in the sunshine!! Not to rub it in or anything ;)

I love travelling so much. I hope to one day do this awesome thing that my school board offers. You can do something called 4 over 5 - where you work for 4 years, but your salary is spread out over 5 years and you take the 5th year off. This way I can travel and stay a fresh and happy teacher. I would love to visit other countries and volunteer / check out schools and bring things back from these systems to my classroom. 

I have been to school in 3 different counties, and wow are they all super different! I think we learn so much from experiencing new and different thing. I want to be able to continue doing this. 

One thing I have learned from living in totally different worlds is enjoy your life; to help you with this you should probably make this carrot cake loaf. I mean that crispy topping is out of this world. What are you waiting for?

Recipe

  • 1/2 cup coconut flour
  • 2 tblsp arrowroot flour
  • 2 tblsp tapioca starch 
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1/4 tsp salt
  • 1.5 mashed bananas
  • 2 eggs
  • 1/3 cup melted coconut oil plus 1 tblsp for greasing the pan
  • 1/3 cup maple syrup
  • 1/2 cup coconut mik
  • 1 cup shredded carrots 

Topping

  •  1 tbslp melted butter
  • 2 tblsps coconut sugar 
  • 3 tblsps chopped pecans

  1. Preheat the oven to 350
  2. Mix all the dry ingredients in a large bowl with a fork
  3. Mash the bananas in a small ball and add all the wet ingredients (not the carrots) 
  4. Add the wet ingredients to the dry ingredients 
  5. Add the carrots and stir
  6. Grease the loaf pan with the remaining tblsp coconut oil
  7. Pour the batter into the pan
  8. Melt the butter for the topping in a small bowl
  9. Mix in the coconut sugar and pecans
  10. Scoop onto the batter
  11. Bake for 45-55 mins, until the center is firm 
  12. Best served warm and smothered in butter
