Almond, No Blend, Energy Balls
I am in a Wednesday slump. I am so tired. I am pretty sure half my problem is that I have a windowless classroom. So I spend about 6 hours a day in a weatherless vortex. I don't know if it is sunny, or raining, or snowing, or what. I miss the sun.
This is the first semester I have had my own room and I am so grateful and happy for that... next step a window!! Its exhausting not getting any sunlight all day. I need more vitamin D. Also doesn't help that it's been winter forever so there is not vitamin D to get anyways. 1.5 more weeks until I am in the Amazonian sun. Hopefully I can store some extra vitamin D while there!! If you live in Canada and are not taking a vitamin D supplement, I highly recommend you consider that. Without vitamin D we can't absorb calcium, it also helps regulate your normal system, protects you against certain diseases, and combats depression. Our bodies produce this vitamin when we are exposed to the sun and we can get it from some foods - but we can boost this with a supplement, especially when there is very little sun to speak of. Like in a Canadian winter. Sigh. Bring on spring.
I made these easy, no food processor or blender needed, yummy, protein and fat packed energy balls to help get me through the slump. They might just do the trick for you too ;)
- 1/2 cup almond butter
- 1 tblsp honey
- 1/2 cup shredded coconut
- 2 scoops collagen (or protein powder)
- 1/2 tsp cinnamon
- 1 tblsp coconut oil
- Mix everything in a bowl
- Scoop out a tblsp and roll into a ball
- Refrigerate the little balls
- makes 8ish balls, depends on the size
