Super Simple Cauliflower Soup
Happy Saturday!! I really need to clean my house and prep for next week but I really don't want to. I just want to lie in bed and read. I have a reading problem. We went to a book fest last night, aka an elementary school selling used books for a dollar a piece. We spent $36. HA. I have pretty much always been like this. Sometimes I go though periods where I forget how much I love escaping into books, but I always find them again.
As a kindergartner I read 1000 books in one year. We had to keep tally, and so I did. I still have that chart. It has just continued from there. I remember just being attached to books as a kid and a teenager and still now as an adult. I don't want to escape the world anymore, like when I was a teenager, but I can't explain how much I love burying myself into someone else's world. I recognize how lame this makes me, but I don't really care. After a week of spending all day with teenagers its a nice break on a lazy Saturday.
What is better than a warm cozy mug of something to go with your book? I love sipping soup out of a mug, it feels so reassuring and just plain cozy.
I love cooking - but I don't always want to fuss, specially when I am at a good part in a book ;) - so this is my recipe for a super easy peasy, nutritious and delicous caluiflower soup. I hope you enjoy.
- I head steamed cauliflower
- 1 can full fat coconut milk
- 1 cup bone broth
- 1 tsp salt and pepper
- 1/2 tsp garlic flakes, onion flakes and paprika
- 1 tbslp butter
- Steam cauliflower either in a steamer on the stove or in the microwave
- Combine all ingredients in a food processor or high powered blend
- Blend until smooth
- Add extra salt and pepper to taste
