Mexican Sausage Casserole

Busy weeks call for all the casseroles! I love casseroles. They are my favourite food group. And I know that makes me sound like a 1920's housewife. But this ain't your grandmas casserole. It's waaaay better. I mean it is literally the best to have protein, carbs and veggies all packaged in one delicious spicy package.

Recipe

Ingredients

  • Two large sweet potatoes 
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 4 sausages (I used 5 pepper pork) - or you can just use ground meat
  • 2 tblsps fat (butter, ghee, avocado oil, pork fat, duck fat, whatever makes you happy)
  • 1/2 cup enchilada sauce
  • 1/4 cup tomato sauce
  • 2 peppers
  • 2 onions
  • 2 jalapenos
  • 1 bunch of green onions 
  • 2 eggs
  • Salt and pepper 
  • toppings: guac, salsa, cheese, sour cream, cilantro 

Directions

  1. Heat oven to 400
  2. Slice sweet potato into bite size pieces and put on a baking sheet with parchment on it
  3. Pour 1 tblsp fat onto the sweet potatoes and sprinkle with 1/2 tsp of the chili powder and the paprika. Add salt and pepper to taste (about 1 tsp each is good) 
  4. But into the over and bake until they are soft, about 30 mins
  5. While the sweet potatoes are baking prepare the rest:
    1. Put 1 tblsp fat in a frying pan and melt
    2. Slice 2 onions into small pieces and add to the pan
    3. Sprinkle with salt
    4. Saute until onions start to get soft
    5. Add two chopped sweet peppers and one chopped jalapeno 
    6. Season with 1/2 tsp chili powder and pepper
    7. When the peppers are soft de-case and crumble the sausages in
    8. When the sausages are cooked turn the element off and add the enchilada sauce and tomato sauce
    9. Mix the two eggs in a bowl and pour into the skillet
    10. Mix it all together until well combined
  6. Remove the sweet potato from the oven and cover the bottom of a square baking dish with the sweet potato
  7. Pour the sausage mixture on top
  8. Top with one more chopped up jalapeno (note I mistakenly put the green onions on before baking...but don't do this!). 
  9. Bake for 40 mins at 400
  10. Top with chopped green onion and any topping you wish and serve

This makes great leftovers and work lunches! And its husband approved. He said it would be extra good with some tortilla chips to scoop it all up with. Oh and a beer.
