Pork Sausage Hash with Kale and Potatoes

I don't know what my problem is. I just spent the last 6 months growing my hair (from basically shaved), but I HATED it the whole time. What was I thinking??!! I love having short hair. So much. Its so easy, versatile, and a unique. Just because I am a women does not mean I need to have long hair!! Why did I even think that. I am embracing me, and what I like and just going for it. If you hate it than that is your problem. I encourage you to do the same. Be you. 100% you. :) 

Speaking of being me, other than casseroles my fav way to eat is all the things combined together. So I have put together a kind of hash meal thing for you. This is totally my favourite way to go about food. All of it combined in a bowl. Covered in kraut. Perfection. Aaaand oh so easy!


Recipe

  • 1 lb ground pork
  • 1/2 tsp salt x 2
  • 1/2 tsp thyme
  • 1/2 tsp onion flakes 
  • 1/4 tsp rosemary
  • sprinkle of pepper
  • 1 tsp ghee x 2
  • 5 potatoes, peeled and diced
  • 2 heads tuscan kale
  1. Combine the pork with the spices and roll into ball, than squish 
  2. Melt the ghee in a skillet, and fry the pork sausages until browned and cooked through, about 3-4 mins / side
  3. Parboil the potatoes, aka boil until they are just starting to get soft - then roast at 400 on a parchment lined baking dish sprinkled with the 2nd tsp of ghee and salt
  4. Meanwhile de-steam and chop the kale into small pieces, saute in the pork skillet (after removing the pork), cook through
  5. Then serve all together; pork sausage with kale and crispy potatoes. YUM. Could be breakfast, lunch or dinner! I had mine with kraut and paleo ketchup :)
