Breakfast Shakshuka

I mean you don't have to eat this for breakfast. I ate it for dinner with plantains, sausage and broccoli, but this does make a delish breakfast. It is spicy, and rich and just plain yummy.

I really don't have anything exciting to say today...sorry...so just a recipe :) 


Recipe

  • 1 tsp fat
  • 1 onion, diced
  • 2 cloves garlic, diced
  • 1/2 jalapeno, diced
  • 1 red pepper, diced
  • 3 diced potatoes
  • 1 jar tomato sauce
  • 1 can diced tomatoes
  • 3 tblsp harissa
  • 4-6 eggs
  • salt and pepper to taste
  1. Melt the fat
  2. Add the onions and cook till translucnet
  3. Add the garlic and saute until fragrant
  4. Add the jalapeno and red pepper
  5. Saute for another 2-3 mins
  6. Add the potatoes, tomato sauce, tomatoes and harissa
  7. Turn to low, and let simmer until the potatoes are soft
  8. Preheat the oven to 375
  9. Pour the tomato mixture into a baking dish, make 4-6 holes in the mixture, crack an egg into each hole
  10. Bake for 20-35 mins  - until the eggs are cooked to your liking

Look, I know I cheated by using this harissa, but the ingredients were super clean, and it just made my life SO EASY. If you want to make it yourself, be my guest. Here is a recipe that looks good!
