CARBS! And Everything Bagel Sweet Potatoes
Since this recipe is about sweet potatoes I think we should talk carbs!

Anyway, my students and I were talking about food today, and I told them I did not eat grains and gluten, and one of my students asked me, shocked, where I get my carbs from. So I explained to him that veggies and fruit have carbs in them and I eat lots of those!
These days carbs are getting a bad rap, but there is a HUGE different between a sweet potato and a slice of white bread. They are not the same. Starchy veggie carbs are much slower burning and provide nutrients as well as carbs.

So keto is a therapeutic diet and works really well for lots of people. There are some amazing keto people out there that I totally love! But it comes back down to knowing your body. I tried keto for around three months, but I was also doing crossfit, and really stressed with school and it resulted in the most insane energy crash I have ever had. Like I was ready for bed at 10 am every single day. Not good. I added carbs back into my life and it has made a huge difference for me!!

It comes down to knowing and listening to your body when it comes to finding the carb amount that works best for you. I typically eat about half of serving of a starchy veggies with lunch and a serving of fruit also with lunch. Plus a full serving of a starchy veg at dinner. But to be honest I don't really pay that much attention. I eat when I am hungry. And I eat what my body wants. Sometimes I am feeling the fat, and sometimes the carbs.
My favourite veggie carbs are: kabocha or delicata squash, sweet potatoes, white potatoes, and plantains. This recipe could literally be made with any of the above starchy veggies. It is delish every which way. Trust me. This version is with sweet potatoes.
- 2 lbs peeled and chopped sweet potatoes
- 1 tblsp avocado oil
- 1 tsp salt
- 1/4 tsp pepper
- 2 tsp onion flakes
- 1 tsp garlic powder
- 1 tsp sesame seeds
- 1 tsp poppy seeds
- Preheat oven to 400
- Line a baking tray with parchment
- Toss sweet potaties with oil and spices
- Bake until soft, about 40 mins
Easy as pie!
