Stuffed Sweet Potatoes

It's Friday!!! WOOO. It was just one of those weeks. Like I baked the oven-mitt in the oven with my plantains. Smooth. Fortunately both my plantains and oven-mitt survived.

So lets just cut to the chase to this yummy meal packed in one easy sweet potato vehicle. Enjoy this stuffed goodness filled recipe. And HAPPY FRIDAY. 

Recipe

  • 3 large sweet potatoes
  • 1 tblsp fat (butter/ghee/etc)
  • 1 yellow onion
  • 1/2 tsp salt
  • 2 sweet red peppers - diced
  • 4 cloves garlic 
  • 3 cups baby spinach
  • 1/2 bbq sauce - either this version, or the one from my cottage pie post
  • 1/4 cup bone broth 
  • 2 cups
  • 2 tsps butter
  • 1 tblsp coconut milk
  • Salt and pepper to taste
  1. Wash and poke some holes in the sweet potatoes with a fork, wrap in foil and bake in a 400 degree oven for about an hour
  2. While the sweet potatoes are baking make the filling
  3. Saute an onion in the fat with the salt 
  4. When it is soft add the garlic and let saute for another minute then add the red peppers
  5. Give the peppers a couple minutes to start to get soft then add the spinach and the broth and stir until the spinach has shrunken and the liquid has cooked off
  6. Remove from the heat
  7. Cut the sweet potatoes in half and scoop out most of the flesh, leave about a 1/2 inch layer in the skin - mash with 2 tsps butter and 1 tblsp coconut milk. Salt and pepper to taste. 
  8. Mix half of the sweet potatoes into the veggies
  9. Scoop this back into the sweet potatoes - filling up to the top of the skin - saving room for the pork
  10. Toss the shredded pork with the BBQ sauce and top the stuffed potatoes with the pork
  11. Bake at 400 for 30 min
  12. Top with microgreens
